Beer Braised Short Ribs

I love America’s Test Kitchen. They try a recipe 300 ways from Sunday and come up with the perfect, failsafe recipe. We love beer braised short ribs, and America’s Test Kitchen has the perfect recipe that is cooked the day before to skim off the excess fat and allow the chef to enjoy the meal the next day.

You can get a subscription to ATK and their two other online and print publications for $69 a year. Whether you watch their PBS shows or not, you can have access to the current year’s recipes and videos. I have had years of success from their recipes, so I choose the $69 access for the variety. Just the other day, I had lost my recipe for Kalbi (Korean) Short Ribs, and I found an excellent alternative at America’s Test Kitchen.

I prepared the accompanying mashed potatoes the day before. I used cream cheese in addition to the half and half and butter, hoping that the triad would keep the potatoes moist during the re-warm period. (You can find lots of slow cooker recipes on the net to do this, but I was hoping to just use the oven this time.) Turns out that the potatoes still dry out considerably when reheated in the oven. Stick with the slow cooker reheat method. An accompanying Romaine salad with a tart homemade dressing was perfect to offset the richness.
